A FRENCH TOUCH
FRENCH ROSE SALAD
A romantic, gourmet salad that looks pretty on the eye and is so easy to prepare. Edible rose petals are available at Culina.

spiced fruit salad
80g green apple wedges
80g mango dice
40g red onion sliced
1tbsp red wine vinegar
2tsp brown sugar
spiced chickpeas
60g canned chickpeas
1 tbsp egg white(beaten)
1 tsp crushed thymes leaves
1 tsp toasted paprika powder
1 tsp brown sugar
1tsp allspice
dressing
3 tbsp olive oil
2 tbsp chopped shallots
2 tbsp red wine
1 tbsp red wine vinegar
pinch salt and pepper
60g mango purée
100g mesclun
200g iceberg lettuce
50g fresh edible rose petals
· Combine spiced fruit salad ingredients together and mix well.
· Combine ingredients for spiced chickpeas, and bake in an oven for 10 minutes at 150˚C.
· Combine dressing ingredients together and mix well.
· Assemble meslun, iceberg lettuce and rose petals, add spiced fruit salad and chickpeas, drizzle with dressing and serve.
