Serves 8 Prep time 10 minutes
Cook time 30 minutes + cooling time


1½ cup heavy cream
½ cup sweetened condensed milk
1½ cup coconut cream
2 tsp vanilla bean paste
1 tbsp plain gelatine
½ tsp vanilla extract
pinch salt
1-2 bars dark chocolate with orange rind (Lindt or other high quality brand)

• In a heavy sauce pan, bring cream, condensed milk and coconut cream to a simmer, then add the gelatine. Continue to simmer gently (don’t boil) until it thickens to a loose pudding texture, about 10 minutes.
• Strain mixture through a fine sieve, then add vanilla paste, vanilla extract and a pinch of salt. Cool in refrigerator where it will thicken a little more.
• Pour each serving into a cocktail glass and shave chocolate over top.
• Serve immediately.
