Wok fried cordyceps with fish fillet

Serves 4
Prep time 10 minutes
Cook time 5 minutes

1tbsp olive oil
120g fresh cordyceps, lightly blanched in boiling water
55g red onions, sliced
5g ginger, sliced
35g spring onion head, chop to small rings
300g garoupa or cod fillet, lightly floured and pan-fried till crispy
pinch salt and white pepper
1tbsp Chinese rose wine
1tbsp oyster sauce
2tsp soya sauce

1tbsp celery root, chopped
4 slices fresh figs

  • Heat up a non-stick pan with olive oil and fry the onions, ginger and spring onions until fragrant over high heat.
  • Add in the cordyceps, and the rest of the ingredient except the wine and fish.
  • Then, and deglaze with rose wine and add in the fish fillets.
  • Lightly wok-fry the ingredients and season to taste.
  • Garnish with celery root and fresh figs to serve.
