While my family was in Patagonia, we lived in three small towns in the Chubut province – Lago Puelo, Río Pico, and Trevelin, a Welsh colony. There, everyone makes their own jams. There is a huge range of berries available around the mountains, lakes and valleys – wild and organic raspberries, strawberries, blackberries, blueberries and blackcurrants.

My favourite jam is made with rose hip, which I’m trying to recreate now in my London restaurant.
