3 Tops Chefs Unite for Australian-inspired Dinner in Singapore

A Fair Dinkum Celebration: Six-Hands Australian-inspired dining experience by chefs Michael Wilson, Sam Aisbett and Rishi Naleendra at Marguerite, Singapore

On 30 January, three of Australia’s most celebrated culinary exports come together for a one-night-only six-hands dinner at Marguerite, Singapore.

Michael Wilson of one-Michelin-starred Marguerite welcomes Sam Aisbett of one-Michelin-starred Akuna (Ho Chi Minh City) and Rishi Naleendra of two-Michelin-starred Cloudstreet (Singapore) for The Fair Dinkum Feast—a six-course dinner in celebration of Australia’s National Day. Priced at $488++ per person, the menu is  paired with six premium Australian wines.

The evening pays tribute to an Australian culinary identity shaped abroad yet grounded in provenance. From the hatted kitchens of iconic mentors such as Peter Gilmore, Andrew McConnell and Tetsuya Wakuda – to earning Michelin stars in their own kitchens across Asia, Michael, Sam and Rishi have confidently blazed trails, flying the Australian flag on a global stage.

The evening kicks off with an array of snacks, including a warming savoury kangaroo tail consommé, before moving into a refreshing dish of Australian kingfish with rhubarb, umeboshi and caviar. A second course of crocodile tongue with split rice porridge and coconut palm follows, leading to a silky onion custard laced with mushroom garum, Western Australian marron, dwarf tomatoes and prickly ash.

Guests then enjoy a main of Australian pork jowl with green-lip abalone, finished with a glossy fish sauce caramel, before a whimsical finale of Australian pepper ice cream with cherry compote, crushed pecans and cotton candy.

Mignardises offer a playful nod to Australia with an elevated interpretation of the beloved Iced Vovo. The evening’s version features buttery shortbread layered with strawberry marmalade and cloaked in a coconut cloud of strawberry marshmallow.

Ahead of dinner, guests are invited on a pre-meal stroll through the Flower Dome and its Australian Garden, home to native flora from Western and South Australia, with complimentary access included as part of the experience. A limousine buggy service to and from the main entrance of Gardens by the Bay completes the evening—an immersive prelude to a dinner that celebrates Australia in its finest form.
