Savour dishes like Tasmanian Lamb with Highland asparagus and citrus-sesame reduction, Hokkaido Scallop with monkey head mushrooms in angelica and goji broth, and Pacific Shark’s Fin Casserole with woody bamboo pith and Boston lobster claws. These, including Chilean Ocean Sea Perch and US Angus Beef, are five additions to their Plates of Pleasure dinner buffet menu till 29 February ($52, $55 for Sunday brunch).
