It’s a warm welcome for gin speciality bar Copper Singapore, set up by the folks behind Oyster Bar at Customs House. Choose to concoct your own gin & tonic from the houseinfused selection ($18), with gin flavours such as tom yum, lavender and saffron, or aim for a classic or reinvented Negroni. The setting is suitably moody and vintage, styled as a Dr Sparks’ eclectic workshop, with bar bites that range from wellexecuted crunchy pig’s ears to babi guling tacos. 10 Jiak Chuan Road. Jiu Zhuang celebrates its second anniversary with a limited season of ingenious cocktails crafted from Chinese wines – likely the first of its kind. Consulting mixologist Jeff Ho is whisking up three cocktails ($22 each) made with honjyozo (sake), huangjiu (‘yellow wine’) and baijiu (‘white wine’), of which the JZ#9 Dream has beguiling notes of orange and chocolate. The progressive Chinoiserie experience continues with bar nosh such as lotus root deepfried with cereal and whisky xiao long bao.
