Get ready for new menu additions at Yì by Jereme Leung, Raffles Hotel Singapore. Served alongside signature favourites, the dishes showcase Chinese provincial dishes with a modern touch whilst retaining traditional flavours and classic styles.
Must-tries are chef Leung’s enticing new selection of drinking snacks including the inventive Pan-fried Cuttlefish Cake on Quinoa with Spicy Tangy Salsa that features an interesting contrast between savoury and tangy, and moreish Deep-fried Marinated Pork Belly with Black Garlic.
Keeping with chef Leung’s penchant for healthy superfoods, his signature Cantonese Roasted Crispy Chicken with Linseeds, Walnuts & Lemon Juice seamlessly incorporates dish linseeds into the dish, with the superfood hailed for its strong nutritional properties.
Likewise the updated selection of appetisers and cold dishes include the Hokkaido Scallops on Cordyceps Flower & Spinach Rolls in Spicy Sesame Sauce. This cold dish originates from the coastal province of Zhejiang, pairing Hokkaido scallops with intricately handmade rolls of cordyceps flowers and spinach, and completed with a spicy sesame sauce and ikura.
Other new delicacies include Sliced South African Abalone & Vegetarian Abalone, Stem Lettuce with Sichuan Green Pepper Dressing that celebrates the citrusy spiciness of Sichuan green peppercorns; as well as Steamed Pomfret with Sun-dried Turnips & Dried Shrimp Sauce served with Luffa Melon stuffed with Minced Shrimp & Black Fungus.
Enjoy a novel selection of savoury and sweet dim sum specially available during lunch, with new creations such as the Freshly-made Marble Squid Ink Rice Rolls stuffed with Crispy Rice Cracker & Hokkaido Scallop, or the decadent Deep-fried Shrimp Balls stuffed with Cheddar Cheese served with Basil Mayonnaise.
