The newly opened Adriana Cocina & Bar brings a slew of authentic Mexican cuisine and creative cocktails to Jimbaran, Bali.
Mexican food and cocktail lovers in Bali will be pleased to know that a new Mexican restaurant and bar recently opened on the island. Adriana Cocina & Bar is located on the eighth floor of the Samasta Village Jimbaran, adjacent to the Movenpick Resort & Spa Jimbaran.
The venue, which was opened on 11 August, combines the vibrant flavours of Mexican cuisine with the artistry of signature cocktails. It opens daily, from 11am to 2 am. The bar highlights a number of foods and cocktails. Take a peek on each of them below.
A Mexican culinary journey with chef Jeremy Tourret
At the helm of the bar’s culinary team is chef Jeremy Tourret who brings authentic yet contemporary Mexican flavours to Bali by blending traditional techniques with modern twists. He has come up with his very own unique approach to Mexican food, gained from his experience living in Mexico, plus working with various cuisine traditions from around the world.
Some highlights of Adriana Cocina & Bar’s main dishes are Pork Carnitas (confit heritage pork terrine, green pipian, pickled beetroot and Sinaloa-style flour tortilla), Lamb Mixiote (pre-Hispanic slow-cooked lamb served with lentil salad, potatoes and pickled vegetables), and Chicken in Adobo (Nayarit-style baby chicken with grilled pineapple salsa). Seafood lovers will enjoy the Caribbean Style Seafood Rice with prawn, octopus and seasonal vegetables as well as the Crispy Softshell Crab made with yellow mole, green mango salad and lime.
Meanwhile, the restaurant also gets the vegetarians covered with its Cauliflower, served slightly smoked and then grilled with miso guajillo cauliflower puree and herb crumbs. Another vegetarian option is Carrots, which is a smoked chipotle hummus with brown tomato butter and fried coriander leaves.
And of course, when you talk about Mexican food, you will inevitably talk about tacos. The bar serves lots of tacos, including Al Pastor Octopus Taco, made with Octopus chicharron, green salsa, refried bean and pickled cabbage, which is great to be paired with beer and sour cocktails. Then there is the Smoked Short Rib Barbacoa Taco, made of pear and onion, kimchi adobo and herbs, which is great to be paired with either beer or red wine.
“At Adriana Cocina & Bar, we’ve poured our hearts into creating dishes that are not just meals but stories—each one a love letter to the rich and diverse culinary traditions of Mexico. By blending traditional techniques with modern touches and the freshest ingredients, both local and imported, we aim to offer our guests an experience that’s as vibrant and passionate as Mexico itself,” said the chef.
Signature cocktails by mixologist Rhama Aprian
The bar presents a slew of drinks for patrons to choose from, highlighting its signature cocktails prepared by head mixologist Rhama Aprian. Guests can indulge in a variety of expertly crafted drinks, each designed to enhance their experience.
Latino Heat (tequila chilli, Adriana’s bloody Mary mix, sesame oil and celery bitter), Summer with Adriana (light rum, pisco, mango, coriander, lime and basil oil), and Adriana’s Kiss (carbonated strawberry aperol, pisco, and chardonnay) are just three of the seductive tipples that you can try at the rooftop venue.
The rooftop bar boasts an ocean view and a clear sight of the sunset. It provides a great setting to spend a romantic evening with your loved ones, hang out with friends, or simply chill out.
