Bali’s dining scene gains another layer of intrigue with the unveiling of the ninth season menu at The cave by Chef Ryan Clift, launched on 21 October 2024. Under the expert guidance of culinary director Ryan Clift and head chef Tay Chan Yong, the new menu draws from the chef’s own memorable experiences and explores multiple genres of cuisine. The cave’s new menu continues to highlight Clift’s flair for innovative presentation and Tay’s skilled execution, bringing a fresh approach that blends local and international influences.

Crab Pai Tee at The cave

Among the standouts is Crab Pai Tee, which takes inspiration from Clift’s encounter with Singaporean chili crab 18 years ago. Salmon Trout is presented with textures of beetroot and cucumber cannelloni, showcasing how this dish has evolved, now embracing Balinese-sourced ingredients to highlight local flavours.

For those drawn to unexpected pairings, the Foie Gras Tiramisu offers a playful yet refined take on blending the familiar richness of foie gras with the contrasting notes of tiramisu. This fusion results in a dish that balances two distinct flavours harmoniously. Another highlight, the Black Cod “Fish & Chips”, reimagines a classic British staple with an inventive twist of not using a batter, yet still maintains its nostalgic essence.

One of the most noteworthy entries remains the Beef Stroganoff. This dish is an elevated take on traditional comfort food, with beef, mushrooms, and charred onions layered beneath a rich beef jus, sour cream, and pommery mustard, creating a hearty yet complex taste profile.

Dining at The cave is more than a meal; it’s an experience heightened by its remarkable location. The cave itself, discovered during villa construction in 2013, provides a visually captivating backdrop of stalactites and natural stone formations. This atmosphere sets the stage for the seasonal menu, where each dish is carefully crafted to resonate with both the environment and the palate.

With thoughtful pairings of wine and cocktails available, each course of the new menu promises to deliver a multi-faceted dining experience that pushes culinary boundaries while evoking familiar tastes. The Classic, a seven-course tasting menu is priced at Rp1,750,000++.
