The Hamabe and SIKI collaboration dinner is set to offer an extraordinary culinary adventure, bringing together the culinary talents of two renowned chefs. The upcoming collaboration will be held at The Westin Resort Nusa Dua, Bali, promises to bring an engaging dining experience. Scheduled for 7 and 8 February 2025, the event will showcase an 8-course menu that blends Japanese culinary expertise with Balinese influences.
Chefs Edwin S. Ana of Hamabe and Vincent Hiew of SIKI will join forces to present a selection of dishes that highlight their distinctive culinary approaches. The menu features contributions from both chefs, including signature dishes from Hamabe and creative offerings from SIKI that combine Japanese techniques with international and local flavours. A special course in the Hamabe and SIKI collaboration dinner will be inspired by the both chefs joining forces, symbolising the exchange of ideas and cultures. The meal concludes with a dessert crafted by the team at The Westin Resort Nusa Dua, Bali.
Chef Edwin brings extensive experience to the table, having worked at globally recognised establishments such as Nobu, The Ritz-Carlton, and Park Hyatt. His background, shaped by time spent in the Philippines and South Africa, influences his approach to Japanese cuisine by incorporating elements from different culinary traditions. While chef Vincent’s career spans multiple continents, including roles at Nobu in Australia and London, as well as Crystal Cruises, where he has developed a style that merges traditional techniques with diverse influences.
Following this event, the Hamabe and SIKI collaboration dinner will continue in May 2025, when chef Edwin will bring Hamabe’s offerings to SIKI, allowing guests to experience the unique flavours in a different setting.
With limited seating available, advance reservations are recommended for those eager to experience this special event. Dinner starts from 5.30pm to 10pm. Price Rp1,200,000++ per person, with additional beverage pairing (cocktail/sake/wine) at Rp350,000++ per person.
