The Warung, an unmissable dining destination at Alila Villas Uluwatu, welcomes Korean culinary maestro chef Louis Han for a memorable Valentine’s Day affair, bringing GU:UM signature flavours to Bali. Renowned for his creative approach to fire-kissed creations at Singapore’s modern Korean steakhouse GU:UM and its one-Michelin-starred sister restaurant NAE:UM, he will brings his signature flavours to ignite a memorable celebration of love for a limited time.
Opening its door to the diners last year in Singapore, GU:UM finally comes to the island through this two-night occasion. Staying true to its name, which means “to grill, roast, or cook over fire” in Korean, GU:UM offers innovative courses of charcoal-grilled meats and extensive contemporary Korean flavours in a chic Western steakhouse setting. For the Valentine’s Day dinner, chef Han will present the steakhouse’s best-selling favourites and exciting new creations.
Expect vibrant, bold flavours honed from chef Han’s 13 years of experience in Asian and Western fine dining. Raised in Gangnam district, Seoul’s famed cultural melting pot, he brings a rich multicultural influence to his cuisine, further shaped by his time in Seoul, Singapore, and the Middle East. Chef Han’s expertise was sharpened in prestigious kitchens, including the three-Michelin-starred Mosu in Seoul.
In 2021, he introduced Korean cuisine to Singapore with the launch of NAE:UM, followed by GU:UM in 2024. His talent was further recognised in 2022 when he received the MICHELIN Guide Young Chef Award.
This collaboration dinner presents a refined take on Korean classics, beginning with perennial crowd-pleasers such as Yukhwae Jeon—crispy potato pancake topped with delicate beef tartare alongside Korean Fried Cauliflower, a vegetarian nod to the beloved yangnyeom fried chicken, and Mulhwae, a traditional cold soup reimagined with seasonal sashimi and a zesty dressing.
As the evening unfolds, a lavish Sang platter of grilled meats and seafood elevates the experience, featuring premium Iberico cuts, Wagyu striploin, fresh fish, and prawns paired with locally sourced charred vegetables. A sharing plate of Bali Herb Al (fish roe) Rice seamlessly blends authentic Korean flavours with Bali’s finest produce, marinated in GU:UM’s signature seasonings.
To round off the evening, Yuzu Makgeoli offers a refreshing finale with poached pear, yuzu, and a de-alcoholised Korean rice wine sorbet, followed by the much-loved Hotteok, a pan-fried rice cake with candied nuts and ice cream.
