Top Chef André Chiang will be setting up home in Raffles Hotel Singapore in late 2025, following a writer’s residency stint with the iconic hotel in the past year.
Raffles Hotel Singapore has just announced the upcoming launch of a brand new dining establishment under the direction of celebrated chef Chef André Chiang. This highly anticipated restaurant featuring the chef’s culinary philosphy and gastronomic mastery will be housed in the hotel’s elegant main building (more details will be revealed on a later date).
“Singapore and Raffles Hotel have always been special to me, and I can’t think of a better place to start a brand-new journey. I’ve always loved and connected with this city – I’m really happy to be back. I call Singapore the home of “grown-up André” and it’s exciting to reconnect with the Singapore audience. I’m going to present a restaurant that’s deeply personal to me, for Singapore, in a setting where I’ve been deeply inspired – Raffles Hotel Singapore. The signature dining room is a beautiful venue and we will presenting a one-of-a-kind culinary experience,” says the Taiwan-born chef, who also recently opened hotpot restaurant Bon Broth at Raffles City.
Meanwhile, the hotel also introduced the prolific chef as the fourth Writer-in-Residence (first launched in 2019) and unveiled his new book titled: “Fragments of Time”. The 200-page tome explores the culinary heritage and innovations associated with Raffles Hotel and Singapore, along with Chef André’s recipes, life experiences and residency at the hotel. His occasional musings and inspirations are interspersed throughout the book.
The chef focused on completing the book within two weeks of his stay at the hotel. He also experimented with the dishes and devised all the recipes during that time. His favourite in the book is the curry and raita creation. He points out, “I envision making a curry alongside a raita, but transforming it into a super refreshing salad on a sunny day. It’s a beautiful starter to serve at any point during your meal or party. For a wild twist, try adding a teaspoon of this curry sorbet to your gin and tonic… you’ll experience a flavour like never before!”
