BORN
One-Michelin-starred Restaurant Born presents a personal and philosophical approach to contemporary cuisine – making it an unforgettable spot to celebrate the season of love. Chef Zor Tan’s elegant mix of French gastronomy and Chinese flavours are evident in the nine-course tasting menu, which opens with five snacks. Other unique highlights include the signature ‘Aged’ Cow Oyster Fried Bao, featuring mala-marinated vintage wagyu beef tartare nestled in a golden brown fried “bao”, and served atop oyster emulsion with crisp Japanese rice puffs, and topped with bresaola; and the Monkfish Fermented Capsicum Chicken Fat, which carries the bold, evocative flavours of Sichuan through char-grilled monkfish paired with velvety emulsified chicken fat infused with Sichuan peppercorn.
Mains-wise, there’s the bincho-grilled pigeon breast topped with pickled ‘huang hua cai’ (⻩花菜) or daylily buds served with braised mushrooms, chicken jus infused egg yolk, Korean glutinous rice wrapped with crispy skin, and grilled leg with garlic bread crumbs. Cleanse the palate with a decadent pre-dessert of bird’s nest served with salted starfruit and pear sorbet. This is followed by the last course of sweet potato puree, with crisps and tater tots – perfectly complemented by an oolong Chantilly, crushed sable, sea salt ice cream, burnt butter, and crowned with a delicate purple sweet potato sable.
