Celebrate Easter the Greek way at estiatorio Milos, Marina Bay Sands as the restaurant marks the holiday on 20 April with traditional dishes such as whole spring lamb with roasted potatoes and Easter salad. There’s also buttery Koulourakia cookies, and tsoureki, a sweet holiday bread that comes with dyed-red hard-boiled eggs, which diners can crack in celebration. The Easter festivities are just one of the dining experiences to be had at Milos, which is renowned for its simple yet elegant Greek fare. Opened just last year, the Singapore outlet stays true to its Mediterranean roots, with interiors boasting Greek artefacts and a serene palette of muted marbles and woods. An open seafood market brims with seafood flown fresh from the Aegean. Diners can also indulge in signature dishes such as the Milos Special, a tower of crispy zucchini and eggplant, tomato salad, whole fish baked in sea salt, Mediterranean octopus, and more, paired with an extensive Greek wine list.
Estate, Hilton Singapore Orchard
Hilton Singapore Orchard’s Estate restaurant is going all in for its Grand Easter Sunday Champagne Brunch on 20 April, spotlighting festive-themed dishes with global flavours. Some highlights to look forward to are the Australian Black Angus Beef Wellington and New Zealand Lumina Lamb Leg. Eggs, which are synonymous with Easter, are interpreted in creative ways, like the velvety soft Hokkaido Bafun uni chawanmushi with mushrooms and scallions, Scotch Eggs topped with Russian caviar, and in a local-meets-international twist, oyster omelette packed with fresh Japanese oysters. Cheese Connoisseurs will appreciate the Raclette station and artisanal selections from France’s renowned cheese-maturing house Les Frères Marchand. Sweet endings await in the Dessert Room, where diners will find all kinds of cakes, chocolates, and gelati. The brunch includes free-flow champagne for adults, while kids can enjoy magic tricks and whimsical balloon art, making it a festive affair for the whole family.
Oasis, Grand Hyatt Singapore
Surrounded by tropical greenery, this poolside restaurant at the Grand Hyatt Singapore sets the scene for a laid back but luxurious Easter Sunday Brunch on 20 April. The spread kicks off with a dazzling Seafood on Ice selection of Boston lobsters, Fine de Claire oysters, and tiger prawns, alongside refreshing appetisers like the zesty Oasis Garden Salad and classic greek salad. In the grilled corner are specialties like the Five Founders’ Bone-in Ribeye, Italian pork sausages, and mint marinated lamb chops, all prepared over an open flame for a smoky, delightfully charred finish. Executive Chef Seumas Smith will be pulling out all the stops, so expect a scrumptious array of both traditional and contemporary favourites. The Cold Buffet will feature fresh seafood from Skai’s Sushi Bar, including oysters, fresh sashimi and sushi, plus a variety of salads and indulgent foie gras and chicken liver tartlets. Mains are served tableside, with dishes like Westholme wagyu beef MB9+ short rib with kabocha pumpkin and red wine jus, miso black cod served with ikura, corn-fed chicken with chestnut and parmesan, or herb-crusted lamb chop with pea, mint, and lemon ricotta. Wrap the meal up with an assortment of festive sweet treats such as apple tarte tatin, carrot cake, pecan vanilla choux, and Easter macarons. To liven up the celebrations, there will also be family-friendly activities like face painting, egg painting, and a fun Easter egg hunt for the children.
