SJM Resorts, S.A. (“SJM”) once again set the gold standard in culinary prestige by serving as the venue supporter for the MICHELIN Guide Ceremony Hong Kong Macau 2025. Held at the opulent Grand Lisboa Palace Resort Macau, the event brought together an audience of over 200 gourmands, dignitaries, and culinary connoisseurs for “Cultural Echoes”—an extraordinary eight-hand dining experience.
Held in March 2025, the immersive evening unfolded at The Grand Pavilion and featured renowned figures in the culinary landscape from across the globe: Julien Tongourian, Executive Chef of the three-MICHELIN-starred Robuchon au Dôme; Himanshu Saini of two MICHELIN-starred Trèsind Studio in Dubai; Tohru Nakamura of two MICHELIN-starred Tohru in der Schreiberei in Munich; and Sang-Hoon Degeimbre of two MICHELIN-starred L’air du temps in Belgium. Together, the star-studded lineup of chefs crafted a cross-cultural dining journey inspired by the theme of “home away from home”.
Each course reflected the chefs’ collective pursuit of excellence—standout dishes included Egg Mimosa with King Crab and Caviar; Scampi Ravioli with Foie Gras Sauce and Black Truffle, and Scallop, Aspic of Mussels, Yuzukosho and Roasted Shell Beurre Blanc.
This prestigious event also served as a spotlight on the Grand Lisboa Palace Resort Macau’s position as a world-class dining destination. Contemporary Portuguese Cuisine at Mesa by José Avillez
Helmed by renowned Chef José Avillez — the first chef in Portugal to earn two Michelin stars —Mesa by José Avillez embodies the concept of casual fine dining. The menu brims with Portuguese, Macanese, and Chinese influences, with creative signature dishes that include the Tuna Tartare Cone, Codfish Cake, and Garlic Emulsion Trout Roe, and Seafood Rice and Caviar. With each dish, the chef invites guests to enjoy a curated selection of petiscos (small plates), perfect for sharing or enjoyed on their own.
An innovative beverage programme led by award-winning mixologist Frederick Ma lets you explore bespoke cocktails inspired by Portugal and Macau’s rich heritage, plus an extensive selection of over 1,800 curated wines.
The space itself is stunning, designed by the legendary fashion icon Karl Lagerfeld, and blends geometric patterns with oriental inspirations. Each table features a pair of magpie designs, symbols of good fortune in both Portuguese and Chinese culture. Meanwhile, a statement cocktail bar and hanging lamps inspired by a traditional Chinese bird cage, as well as oriental-styled chairs, highlight the space’s East-meets-West vibe.
Japanese Artistry at Zuicho
For an intimate dining experience, Zuicho at Grand Lisboa Palace Resort Macau presents a refined take on traditional kappo cuisine. Kappo, which means ‘to cut and cook’, emphasises quality ingredients and the interaction between the chefs and diners—key elements that make up the experience at Zuicho.
Behind the counter is Chef Yoshinori Kinomoto, who has nearly three decades of expertise in Japanese cuisine. Formerly based in coastal Ishikawa, a prefecture known for its abundant seafood and bountiful produce, Chef Kinomoto is particularly skilled at fish preparation. He also carefully curates the order and serving time of every dish on Zuicho’s multi-course menu, creating a personal and holistic experience for every diner.
Expect dishes with a strong focus on the seasons, such as Oyster with Prawn, Seasonal Sashimi, Hairy Crab and Takikomi Rice with Seasonal Seafood. To pair with the food is an impressive beverage list that includes world-class sake and wine, traditional Japanese tea, whisky, and beer.

The centrepiece is a magnificent nine-metre counter made of 350-year-old hinoki wood, this statement piece immediately draws the eye of all who enter the restaurant.
