Making waves in the culinary scene since its 2023 debut—and following the success of its first event in 2025 with Baan Tepa—Rumari at Raffles Bali unveils the next two editions of its Rumari & Friends four-hands dinner series. This collaboration brings together global culinary maestros to craft an extraordinary dining experience, celebrating friendship, cultural exchange, and diverse influences.

This time, Rumari’s very own chef Gaetan Biesuz welcomes two esteemed talents: chef Arnaud Dunand Sauthier of Maison Dunand, Bangkok, and chef Andre Lee of Mariposa at Fairmont Ambassador Seoul, for an exclusive gastronomic exchange.
Rumari x Maison Dunand
The one-Michelin-starred Maison Dunand brings a taste of France to the heart of Bangkok, where chef Dunand weaves flavours from his childhood in the Savoie region into refined, contemporary creations. While his reputation for French gastronomy is unquestionable, diners can expect more than just classic technique on their plates.

With 25 years of global experience, chef Dunand has developed a signature style—where traditional French cuisine meets modern expression, shaped by his travels and a deep-rooted connection to Savoie and Brittany. His journey has taken him through some of the world’s most prestigious kitchens, working alongside culinary luminaries such as Marc Veyrat, Jacques Lameloise, and Jean-François Piège at Hôtel de Crillon.
At Rumari, chef Biesuz, a Lyon native, mirrors this ethos, blending traditional French techniques with the characterful flavours of Southeast Asia. Their collaboration in Rumari and Friends entails a masterful tribute to French heritage, set to unfold at Rumari, Raffles Bali, on 22 and 23 March.

“This collaboration is a celebration of our shared French heritage,” states chef Biesuz. “It’s an honour to work with chef Arnaud to present a menu that reflects the evolution of French cuisine in a global context.”
Rumari x Mariposa
The next chapter of Rumari and Friends unfolds as a two-part culinary exchange, where chefs will not only showcase their artistry at Rumari at Raffles Bali but also at Mariposa in Fairmont Ambassador Seoul. The journey begins in Seoul on 18 and 19 April, with chef Gaetan Biesuz stepping into the kitchen of chef Andre Lee.

Renowned for its contemporary European approach, Mariposa highlights seasonal ingredients and the finest seafood from Noryangjin Fish Market. Chef Lee, a Gold Prize recipient at the 2010 Wine & Gourmet Asia Young Chef Competition, brings an exquisite finesse to the table. The collaboration promises a harmonious fusion of chef Biesuz’s Indonesian and Southeast Asian influences with Chef Lee’s refined European sensibilities.

The second part unfolds at Rumari on 16 and 17 May, where Chef Lee will reimagine his culinary philosophy through a new lens, crafting an exclusive menu that blends his contemporary European expertise with the spirit of Rumari’s distinctive approach.
