Don’t miss the Caviar Discovery Dinner by Rumari at Raffles Bali

Championing sustainable and innovative fine dining experiences is what Rumari has been known to its loyal patrons. This time, Raffles Bali ‘s signature gastronomic destination invites guests to join a sumptuous evening with Maison Kaviari France through the Caviar Discover Dinner.

The one-night-only exclusive dinner features a curated degustation menu, exhibiting a premium range of caviars. With commitment and savoir-faire for sustainable practices in gastronomy, Rumari and Maison Kaviari have come up with a tantalising five-course caviar-centric dinner.

Fresh caviar of Maison Kaviari France

Amassing over four decades of experience, Maison Kaviari France garners its excellence through its product qualities, ethical sourcing, and sustainable endeavour. The caviar house’s eco-responsibility extends to its decision to work exclusively with sturgeon farms that uphold the well-being and conservation of the fish.

Possessing the same ideals, Rumari’s culinary director chef, Gaetan Biesuz, meticulously prepared dishes that brought the caviar’s flavours to the forefront. Simultaneously, experts from the Maison Kaviari will be present to give guests a deeper understanding of each caviar dish.

Ahi Tuna Carpaccio will be the first course, presented and paired with Transmontanus caviar that creates a buttery texture and subtle, woody notes. The dinner continues with Prawn Chawan Mushi with Baeri caviar that exudes an iodised aroma and perfect saltiness.

The next course highlights Oscietra caviar’s slight marine and nutty hints through Java Burrata Tortellini. Guests can look forward to the Gindara and Asparagus, where Kristal caviar’s olive green and golden hues reveal complex flavours, aroma of fresh almonds, hints of honey, and end with a floral aftertaste.

Make room for a sweet delight: the Manjari 64% Chocolate, matched with cashew nuts, mascarpone, passion fruit, and coconut. Expect a delightful Caviar Surprise at the end of the evening.
