Wing Lei Bar at Wynn Palace Unveils a Bold New Concept

Wynn Palace has done it again. Renowned for its elevated gastronomic-focused dining and drinking offerings, Macau’s opulent five-star hotel unveiled a bold new concept for Wing Lei Bar on 12 March 2025. Situated on the lobby level of Wynn Palace, Macau, the gilded bar resembles a jewellery box and, as such, is filled with treasures of delightful libations.

Open daily from 5pm to 1am, a tasselled green curtain conceals an intimate bar where a warm welcome and quiet respite can be found. Mark Lloyd, a Scottish native who has called Asia home for the past 15 years, can often be found behind the gilded bar. There are no centrifuge machines or rotovaps on the counter. Instead, the counter proudly showcases house-made tinctures, infusions, and repurposed ingredients sourced from the hotel’s Michelin-starred dining establishments. From char siu off-cuts to avocado peels, Lloyd’s classic technique and bold creativity gave birth to Wing Lei Bar’s new “limitless cocktails” concept.

Taking inspiration from Macau’s historical neighbourhoods, such as Coloane, and the region’s unique blend of gastronomic influences across centuries, the Wing Lei Signatures by head mixologist Mark Lloyd features a selection of 12 cocktails, including Classics, Alternatini, Sours, and Stirred.

Classics is all about reimagining classic cocktails, many of which happen to be Lloyd’s all-time favourites. Highlights include the saucy Margarita (concocted with tequila, lacto-fermented chilli, coriander, and lime) and the Breakfast Gimlet, a cheeky rendition of the classic gimlet made with Boatyard Gin, lime, agave syrup-infused cornflakes, and pink peppercorn.

Martini fans will find the Alternatini selection, with its three cocktails featuring unique flavour profiles, enticing. For a taste of the tropics, opt for the Yuenyueng (pineapple rum with espresso, black tea, and pineapple syrup). The Pandantini makes for a perfect dessert cocktail, with its white chocolate-washed pandan vodka, raspberry, jackfruit, and aromatic grapefruit. Last but not least, the Passionfruit Martini offers a faithful take on the classic.

Cupid from the Sours selection was a favourite among guests at the opening night. It artfully balances pisco, lacto-fermented strawberry, Aperol, lemon, and toasted coconut, creating a glassful of acidity and sweetness.

For fans of bold and flavour-forward drinks, the Stirred selection will undoubtedly hit the spot. The Cola Cube uses bourbon, Penja pepper, and cola bitters to create a spiced and smoky libation, while the Forgotten Maine offers a smooth cocktail made with rye, sweet vermouth, cherry, and avocado oil.

Wing Lei Bar also offers an Off-Menu Bespoke drink, where guests can personalise their cocktails. Lloyd will ask four questions to tailor-make a drink based on their palates and his signature approach. This option embodies the bar’s approach to hospitality, where personal connection and friendly service are woven seamlessly into the plush hotel bar experience.

The launch party continued into the next day when Patrick Zhou, the General Manager of The Union Trading Company in Shanghai, took over the bar and showcased his flair with vibrant spices, ingredients, and flavours in five signature drinks. Expect a stellar lineup of guest shifts each month throughout 2025 at Wing Lei Bar.
