Exceptional Dining is Part of the Experience When You Stay at Hilton Bali Resort
With Clinton Webber as executive chef, Hilton Bali Resort is raising the bar for exceptional dining across its six venues.
‘Know Thy Neighbor’ has been executive chef Clinton Webber’s guiding philosophy since he joined the beachfront resort in Nusa Dua seven years ago. By using fresh, seasonal ingredients, championing local artisans, fishers, and food producers, and minimising kitchen’s waste, the New Zealand native continues to push the boundaries across Hilton Bali Resort’s exceptional dining offerings.
Having worked in Thailand, Vietnam, and Indonesia for the past 15 years, he now leads 127 culinary team members at Hilton Bali Resort. “Normally, hotels don’t have the luxury of constantly tweaking their menus, but here, we consistently improve them,” adds the chef. At Hilton Bali Resort, guests will find exciting concepts, expertly shaken or stirred cocktails, and impeccable services.
Indeed, guests who stay at Nusa Dua’s family-friendly resort are pampered, from an astounding selection of breakfast spreads at Grain to a beachfront dinner at The Shore. Here are the Hilton Bali Resort’s six delicious dining and drinking destinations for your next stay.
Grain
As one of Hilton Bali Resort’s exceptional dining venues, Grain offers a nourishing start to the day with its expansive breakfast buffet, designed to fuel guests with fresh, wholesome options.
The buffet celebrates local and international flavours, featuring a selection of seasonal fruits, organic vegetables, and locally sourced ingredients. From freshly baked pastries to made-to-order egg dishes, guests can indulge in various choices that cater to all tastes and dietary preferences. The curated spread includes Indian, Indonesian, Asian, and Western fare, healthy smoothie bowls and a stellar granola selection, artisanal bread, as well as freshly brewed coffee and juices, ensuring each guest enjoys an energising meal to kick-start their day in Bali.
As the day transitions into evening, Grain continues to impress with its thoughtfully designed thematic dinners that explore the rich culinary diversity across the globe. Each night, the restaurant hosts a rotating theme, inviting guests to embark on a gastronomic journey—from the flavourful Taste of Spain (Mondays, Wednesdays, and Saturdays) to the Rodizio Southern Grill (Tuesdays and Fridays). The immersive dining experience is complemented by live cooking stations and a curated selection of wines and cocktails.
The Breeze
Nestled along the stunning beachfront of the resort, The Breeze offers a relaxed dining experience where the sound of waves and the salty air set the perfect backdrop for every meal.
Embracing the resort’s “Know Thy Neighbor” philosophy, The Breeze focuses on sustainably sourced, locally produced ingredients, championing Bali’s rich agricultural heritage. The guilt-free menu features fresh, seasonal dishes that highlight the island’s best offerings, such as the signature Chorizo & Burrata Tartine with roasted tomatoes, crunchy chickpea crumble, and radicchio or a fulfilling Asparagus, Kale & Burrata salad with olive biscuit, pine nut crumble, blueberry, and pesto dressing.
Elara
The newly launched Elara at Hilton Bali Resort brings a fresh taste of the Mediterranean in a refined and exclusive dining experience. With a menu inspired by the sun-kissed shores of Greece, Turkey, Spain, and Italy, Elara serves up vibrant, flavour-packed small bites and sharing-style dishes made with the finest seasonal ingredients.
Whether enjoying a cauliflower croquetas with Tyrolean speck, Manchego, and roasted garlic aioli or handpicking a charcuterie platter from the house-hang selection of cured meats, the restaurant promises an unforgettable culinary journey. Don’t miss the Octopus, a perfectly cooked dish served with potato, chilli, white anchovies, capers, olives, oregano, and ceviche dressing.
The intimate, adult-only setting enhances the experience, making it an ideal destination for couples and those seeking a sophisticated yet relaxed atmosphere by the sea. There are sea-facing cabanas for naps and a plunge pool to cool down in between sips of Red Sangria. “There are many Mediterranean restaurants in Bali, but our specific choices of regionalities give us more definition and focus,” adds Webber.
Paon Bali
No stay is complete without delving into the flavourful Balinese cuisine. Paon Bali offers an authentic journey into the heart of Balinese cuisine, where guests can experience the traditional dishes of the island.
At the core of Paon Bali’s menu is the Megibung experience—a communal feast that brings together family-style dishes served on large platters, encouraging sharing and connection. Other highlights include Roasted Duck Betutu, Seafood Kare, Babi Guling Samsam, and Totok Clam Bakar. With its focus on tradition and bold flavors, Paon Bali offers a true taste of Bali’s culinary heritage, making every meal a celebration of local culture.
Delicatessen
This aptly named venue on the lobby level is a convenient spot to grab a sandwich or have a quick caffeine fix. Guests can find daily baked goodies such as croissants and muffins as well as made-to-order cakes to celebrate special occasions. From the Triple Chocolate and Hazelnut Fudge to Fresh Fruit Vanilla, the cakes will undoubtedly leave a lasting impression.
The Shore
Last but not least, The Shore is unmistakably one of the guests’ favourite restaurants for dinner. This romantic beachfront venue focuses on sustainably sourced seafood from Bali and the surrounding islands. With its open-air seating, the restaurant beautifully blends modern design with the island’s distinctive flair.
Webber and his team offer diners an extensive menu that will satisfy even the most discerning palate. Start with Zucchini Flowers stuffed with goat cheese, mojo verde, and lemon & honeycomb dressing, or Scallop Ceviche with okra, chorizo, lavender, blueberries, and puffed couscous, before indulging in a selection of wood-fired pizzas and flatbreads, aged seafood and meats, and delightful desserts. From wood-fired Papua King Prawns with chermoula butter to a 35-day aged Australian Black Angus Ribeye, a visit to The Shore is a perfect reflection of what Hilton Bali Resort is all about.
