A palette of flavours with Tiffin Room’s Holi set menu
Award-winning chef Kuldeep Negi prepares a sumptuous spread of traditional Indian fare for the vibrant festival.
The Indian festival of colours is always an exuberant affair, and Raffles Hotel Singapore believes food is the best way to celebrate. All-day dining restaurant Tiffin Room, which pays homage to the hotel’s history by focusing on North Indian cuisine, busts out all the stops for the upcoming festive period with the Flavours of Holi menu.
Available as a vegetarian/non-vegetarian four-course lunch ($68/person) or five-course dinner ($78/person), the menu embodies the spirit of Holi with an equally kaleidoscopic array of vegetarian dishes, North Indian delicacies and Indian street food. Chaat, the (quite literally) daily bread of India) will be the focus of the latter; Tiffin Room’s Kachori Chaat sees a mixture of potato, tamarind and mint chutney stuffed into a pillow of crisp fried bread.
Vegetarian food is yet another highlight of North Indian cuisine, and the menu includes the widely popular paneer in the Achari Paneer Tikka, a robustly flavoured Indian cottage cheese dish that is finished in the tandoor oven. Otherwise, enjoy their Lamb Seekh Kebab, bolstered by an aromatic blend of cumin and cheddar cheese. To complete the experience, indulge in sweets like the Pista Gujia, a traditional cheese and nuts dumpling.
