This chef collab by mezza9 and The Market Grill will please your palate

Lobster rolls. Barramundi fillets. Beef short ribs. If you love your seafood and beef, these dishes will keep your palates excited. Now, mezza9 at Grand Hyatt Singapore, and The Market Grill, a restaurant under the Unlisted Collection, have come together for a three-day collaboration on 26, 27 and 30 July to present these scrumptious delights and more.
On 26 and 27 July, diners can choose from à la carte and three-course set menu ($88) options at mezza9 or bar snacks at Martini Bar. The bar snack menu features three items to satiate peckish demands, including Crispy Pig Ears ($18) marinated with spiced vinaigrette, chilli and lemongrass, and Glazed Beef Cubes ($18), featuring the flavourful Wagyu oyster blade cut. For dinner at mezza9, try the lobster salad ($28), which offers generous chunks of briny-sweet Maine lobster paired with burnt grapefruit, romaine lettuce, shaved fennel as well as goat cheese for a touch of creaminess. Fans of The Market Grill’s crowd-pleasing Lobster Roll will be happy to find the same signature ($39) served at mezza9. The Surf and Turf ($88) is also another drool-inducing treat. Think Black Angus short ribs sous vide for 24 hours to seal in the juices and Maine lobster tail, thermidor style, complete with fries and salad.
A more exclusive dinner experience ($148) will take place on 30 July for just 50 guests. Chef de cuisine Frank Wackerhagen of mezza9 and executive chef Kenneth Lin of The Market Grill will showcase off-the-menu dishes while cocktail pairings will be created by Joe Chan, restaurant manager of Bincho, a yakitori and cocktail gastrobar.
