Fans of chef Marco Pedrelli’s light handed take on Italian cuisine should spend a languorous weekend tucking into Dolce Vita’s champagne brunch (from $148) by Mandarin Oriental Singapore’s landscaped poolside. His delicate, balanced touches are on show, as exemplified by the starters of Timbale of Crab with Avocado Mousse, and Tartar of Angus Beef Tenderloin with Quail Eggs to name a few.
Taught the skill of handcrafted pasta by his grandmother in his earlier years, Pedrelli has included pastas that exude homemade goodness like Green Pea-Potato Gnocchi with Prawns and Saffron, and Braised Oxtail-Foie Gras Cannelloni with Baby Spinach and Parmesan Cheese Cream to the list of 12 mains.
