Even with a slew of new trattorias and tapas bars that have grabbed diners’ attention lately, Chinese restaurants are not resting on their laurels in a bid to woo new patrons.

Acolytes of elBulli who have been wondering about the whereabouts of chef Alain Devahive Tolosa—who spent a decade at the kitchen of the culinary temple—now have an answer: he has gone East. Tolosa will be helming Catalunya, a contemporary Spanish restaurant located in The Fullerton Pavilion. The 120-seater establishment, which is wrapped in a glass dome that offers views of the Marina Bay district, is designed by award-winning New York design firm, AvroKO. Tolosa will conjure up traditional Spanish recipes using modern culinary techniques. Pol Perello, who previously served as director of communications and restaurant manager for elBulli for 12 years, will run Catalunya’s service floor alongside a team of staff from Ferran Adrià’s outfit and other renowned tables like Barcelona’s Drolma and Sketch by Pierre Gagnaire.
