Size matters when it comes to dumplings—master chef Lai Tong Ping of Hai Tien Lo once again presents his signature Giant Rice Dumpling Indulgence ($68) that feeds four to five persons. Generously filled with a decadent combination of black truffle, abalone, scallop, freshly-roasted meat, mushroom, golden salted egg yolk and dried lotus seed, it is a meal on its own.

Shang Palace
, Bamboo leaf parcelsFor dessert, try Shang Palace’s new Egg Custard with Bird’s Nest Dumpling ($25). Sticky glutinous rice enrobes smooth egg custard and nourishing bird’s nest to create a novel delicacy. Another toothsome treat is the Sweet Green Tea Dumpling ($7.50)—a refreshing creation that blends the best of Chinese and Japanese flavours.

Din Tai Fung
, Bamboo leaf parcelsUnlike most other ‘pyramid’ dumplings, Din Tai Feng’s red bean rice dumplings ($4) are uniquely shaped like traditional Chinese hard box pillows. Made from top grade Taiwan ‘pearl rice’ for a chewy and extra-smooth bite and complemented with the finest red bean paste, it can be eaten at room temperature but tastes best when served steaming hot.

Organic foods are all the rage and Mandarin Court Chinese Restaurant jumps on the bandwagon by introducing the Organic Mixed Grains Dumpling ($6.80).
