What you can expect at One Farrer Hotel & Spa’s Food Street

Expect a lineup of food stalls, a seafood market and your favourite local DJs at the nostalgic pop-up event.

Once home to numerous famous food stalls along Northumberland and Owen Roads, Farrer Park holds many delicious memories for Singaporeans. Following its first successful Food Street in March this year, One Farrer Hotel & Spa will once again bring back familiar hawker dishes of yesteryear like Hokkien prawn noodles, fried carrot cake and rojak. The stretch of food stalls will be located at the open area along Race Course Road and outside the hotel’s Origins of Food culinary studio.

A highlight is the Hokkien prawn noodles – “Food Street’s version will stay true to its origins and will be served with opah leaves,” says Dr Richard Helfer, chairman of One Farrer Hotel & Spa.  Instead of using pork lard for a richer flavour, Food Street’s chefs uses a savoury prawn stock. “It’s a much healthier version, yet the taste of the olden days still remains,” Helfer adds.

Be prepared to try a little of everything, as you’ll be treated to an array of scrumptious local fare like fragrant pandan kueh dadar, Penang assam laksa, and ba-long drinks the likes of bandung and ‘bird’s nest’ agar agar.

One of the Food Street’s new offerings will be the Mega Paella Pan of Spanish and Portuguese origin at the Food Bazaar, which will also be serving homemade bread and butter pickles, peach pickles, beetroot pickles, and One Farrer’s signature homemade pies.

“Our chef introduced the Portuguese paella to commemorate the Portuguese-Eurasian community who originally settled in Farrer Park. Such dishes are usually the centrepiece of a festive meal, hence the idea of creating such a family style offering for our Food Street,” explains Helfer. “We have updated the paella to be a closer cousin to mariscada, which is an Atlantic-inspired seafood rice dish popular in coastal Portugal.”

On top of the food stalls, you can also look forward to a Seafood Market in Local, Fresh and Seasonal (LFS), the hotel’s deli where you can usually find wholesome fare such as soups and salads.

If you’re eager to expand your ingredient knowledge, sign up for the Market to Table discovery programme ($100/person, 16 or 30 July from 9.30am to 12.30pm) at Origins of Food, during which you’ll be introduced to the chefs’ frequented stalls at Tekka Market.

“Participants will learn to select the best ingredients from the market. This exploration will continue with a cooking session back at the Origins of Food studio, where our chefs will demonstrate the preparation and techniques of cooking local signature items – Fish Head Curry and Cheng Tng. Along the way, participants can learn hands-on cooking skills and also enjoy the rewards of their toil!” raves Helfer.

And what fun is a food event without music? The hotel houses Box Kite No. 27, a three-storey al fresco space that overlooks the site of Singapore’s first manned air flight. Within, you can dine on Hawaiian-style pupus, roast meats and farm-fresh vegetables and home-style desserts. Groove to the upbeat tunes spun by DJ Q Doll and DJ Victoria on 16 July, and EJMissy and DJ Shigeki on 30 July.
