Four Hands dinner in Bali: guest chef Ramael Scully from Scully St James’s, London

With a soothing timber and cream interior, walls filled with sepia tone artworks and a covet-worthy, glass enclosed wine cellar, dining at Salon Bali is akin to visiting a foodie friend’s effortlessly sophisticated home. Located at the tastefully modern Hotel Indigo Bali Seminyak Beach, the rustic-chic restaurant has been attracting a fan base for its modern take on Indonesian cuisine.

Over the past year, the dining destination has also gained prominence for its monthly Four Hands collaborations with talented chefs from Indonesia and beyond. (Past guest chefs include Drew Nocente from Salted & Hung and Charlie Carrington from Atlas Dining.) Aptly called Purnama Dinner – each collab takes place during a full moon  – this month’s guest chef is Ramael Scully, a familiar name on the London’s dining scene. The head chef and co-owner of Scully St. James’s in London will team up with Salon Bali’s executive chef Nic Philip to create five courses of sharing plates.

Given Scully’s inclination towards eclectic Middle East and Asian flavours, it will be exciting to experience his inspired interpretation of Balinese cuisine. Diners can catch him behind the open kitchen at Salon Bali as they savour a succession of snacks and cocktails in between the sharing courses. Cocktails will be concocted by Harry Wahyudi of Akademi Bar. The innovative mixologist has been quenching Balinese’s thirst with creative cocktails since he joined Potato Head Beach Club Bali seven years ago.

The five-course dinner is priced at Rp650,000/person and Rp1,000,000/person for cocktail pairing. Reservation is needed.
