For one-night-only, savour Il Ristorante – Luca Fantin’s new spring degustation menu paired with excellent Enrico Serafino wines on 7 June.

Nestled within Bulgari Resort Bali, Il Ristorante – Luca Fantin is known for serving contemporary Italian cuisine with special attention to seasonality and local produce. Led by executive chef Luca Fantin and resident head chef Alessandro Mazzali, expect an impeccable degustation menu with seductive ocean vistas and an elegant black-and-white open-air restaurant.

As a sister of Il Ristorante – Luca Fantin in Tokyo, Fantin’s mastery of ingredients is evident in dishes that celebrate the fleeting beauty of springtime. The Italian-influenced dishes showcase the island’s Kintamani vanilla, river prawns, and other seafood produce, as well as exclusive artisanal ingredients like Hokkaido scallops, Beluga caviar, and Australian Wagyu beef. “It is important to first master the ingredient, then flavour. Once you master it, you can do anything with it,” says Fantin on his last visit.

Il Ristorante – Luca Fantin’s Spring Degustation Menu

The vibrant dishes on Il Ristorante – Luca Fantin’s spring degustation menu is a delightful exploration of the island’s terroir. From the highland of Kintamani, Tagliatelle con burro alla vaniglia e caviale is a homage to the island’s vanilla and a successfully brazen attempt at incorporating the aromatic spice in a savoury dish.

Freshly-caught amberjack and wild snapper from the island’s waters are expertly used, respectively, in Crudo di ricciola, cetriolo ed acqua di pomodoro and Dentice in guazzetto di olive e capperi. The first teases the palate with pickled cucumber and zesty tomato water, while the latter delves deeper into a rich territory, highlighting the supple freshness of the fish against the savoury guazzetto of olive and capers.

The Cioccolato, gelato al caffe’ e whiskey, foglie di tabacco with its hint of smokiness is a definite crowd’s pleaser, as does the presentation of petit fours on two lavishly decorated trays. Under the assured expertise of both chefs, Il Ristorante – Luca Fantin’s spring menu gains a new and exciting nuance and refinements. The seasonal spring menu is only available until July 2024.

The Enrico Serafino Wine Experience

On 7 June, discerning foodies and oenophiles are invited to indulge in a one-night-only Enrico Serafino Wine Experience. Expect excellent pairings between Il Ristorante – Luca Fantin’s spring degustation menu with selected Enrico Serafino wines. Founded in 1878, the family winery in Piemonte, Italy has been crafting artisan wines from harvested Barolo, Langhe, Roero, and Monferrato grapes. The Enrico Serafino wines tell a compelling story about its terroir, a UNESCO World Heritage wine region. For over 140 years, the family-owned winery has continued to uphold its legacy and commitment to quality winemaking.

The evening will start with a sunset cocktail at La Terrazza, Bulgari Resort Bali‘s oceanfront lawn at 6pm, followed by dinner at Il Ristorante – Luca Fantin. Limited seating capacity. Reservation is highly recommended.
