COSTA
Inspired by Spain’s Catalonia region, BIKO Group’s new 84-seat restaurant in South Jakarta offers vibrant flavours from both land and sea. Led by chef Ryan Theja, the à la carte menu features an exciting blend of dishes that celebrate the essence of Catalonia cuisine. The Lombok native has made a splash in Bali’s dining scene with his expertise in seafood and he is excited to open the new ingredient-driven restaurant.

The menu showcases top local and premium produce in dishes such as Chopitos (stuffed baby cuttlefish, chorizo, and potato sauce), Bottifarra Esparracada (a Catalan-style spread pork sausage with eggplant and raisins), an excellent crustacean section made of Makassarese Cigala Real and Flower Prawn from Kaimana, Papua. For mains, indulge in the substantial Bone In Lamb Saddle served with rioja sauce and pistachio tapenade and opt for the three options of arroz: parmesan velouté & fungi; sofrito, braised blackmore wagyu and tongue; and mud crab, banana prawn, and salmoretta. Save some space for the sultry Duck Egg Crème Catalana.

TIDE & TABLE

Seafood also takes centre stage at this ocean steakhouse restaurant in Melawai, South Jakarta. Using a wealth of seafood available, chef Theodore Darrel highlights his expertise in butchery, curing, smoking, and dry-aging. Indonesia’s finest produce shines in dishes like the dry-aged Roasted Swordfish Belly, Kombu Aged Fish with Black Mussels, Ikura, and Seaweed Butter Sauce; and wholesome Grilled Tiger Prawns with XO rice and prawn head pepper butter.
Open for lunch and dinner, the restaurant serves an à la carte menu in a casual, ocean-inspired setting. From flowing marble to sturdy boulders that mimic the reefs, the interior evokes the ebb and flow of the tides.

SAZÓN TAPAS BAR & GRILL

The conviviality of a Spanish tapas bar is brought to life at Canggu’s latest restaurant. Led by chef AndrewWalsh of Singapore’s Cure, sharing is indeed caring in this 133-seat spot. Together with head chef Javier Vicente, he came up with signature dishes such as Spanish Tortilla with Potato & Onion Jam and Chorizo Tomato, Paella with Iberico Pork & Mushrooms Sofrito, Aioli, and Kale. Savour Parrilla-grill dishes such as Octopus with Potato Espuma and Escalivada Peppers as well as the 28-Day Dry-Aged Beef ‘Txuleta’ Confit Garlic as mains. Pair the dishes with Sangria Blanca or Aperitivo de Marianito cocktails for an irresistible evening.

MANAW

Aptly named after the Thai word for lime, this lustrous rice field-facing restaurant in Seminyak is a homage to the vibrant flavours of Thailand. Weaving traditional recipes with modern presentation, the dishes are made from scratch and designed to be shared. Highlights are Salt-Crusted Barramundi (flambéed and then served table side with zesty nam jim sauce), Octopus Yellow Curry with cauliflower purée and Thai chimichurri, and Beef Ribs Khao Soi. Savour delightful libations such as the Smoked Sup-Pa-Rod and Salted Cacao. The first features spiced rum with a hint of citrus, while the latter mixes vodka with rich cacao brown and white liqueurs and Tejakula sea salt.
