Sea Fire Salt: A New Flame-Kissed Menu at Botol Biru Bar & Grill

The terraced architecture of Anantara Uluwatu Bali Resort offers guests of Botol Biru Bar & Grill an irresistible view of the Indian Ocean. From its perch, the ocean stretches uninterrupted as far as the eye can see, while the salty air and sultry breezes gently cool the open-air restaurant. Open daily from 11am to 9pm, the restaurant has recently launched a new menu: Sea Fire Salt.

Led by executive sous chef Putu Dana Wijaya, the culinary team has crafted an exceptional tribute to Bali’s terroir and its produce. The new Sea Fire Salt menu celebrates the very best of the sea, the grill, and the essential role of the island’s sea salt in every dish.

Traditionally produced sea salts from farmers in Tejakula, Amed, and Kusamba are featured in the dishes. At the table, guests are given the option to sprinkle their Grilled Jimbaran Lobster or Barramundi with six gourmet salt selections. From the spicy Red Devil’s Heat Salt to the garlicky and herbaceous Garden Salt, the housemade salts are designed to enhance the dining experience at Botol Biru Bar & Grill.

Guests can start with freshly shucked, plump oysters from Papua, which only require a dash of mignonette sauce and lemon juice. The Tejakula Salt-Crusted Tuna Tataki, Charred Octopus Salad, Cured Grouper, and Beetroot highlight the chef’s expertise with fresh seafood.

The Barbecue Platter is available in two cooking styles: Balinese or Western. The Balinese version features various sambals as condiments, accompanied by rice and vegetable urap, while the Western style includes lemon butter sauce, tomato salsa, salad, and roasted herb potatoes to complement an enormous serving of grilled lamb rack or pork ribs, striploin steak, prawns, barramundi, Lombok clams, and squid.

Flame-kissed grills such as yellowfin tuna, tiger prawns, Angus beef tenderloin, salmon, and more are available with a myriad of sauces to suit your preferences. Whether it’s a fermented black garlic sauce or the classic chimichurri, you can enjoy a delectable dish with stunning views from your perch.

A four-course set menu is also available for your enjoyment. It includes dishes such as Local Burrata with tomato, avocado, and herbs; Charred Octopus; Grilled Sirloin of Harvey Beef; and a refreshing Lemon Yoghurt Parfait for dessert. The option to choose between the à la carte or set menus gives guests flexibility with no hassle during their downtime in Uluwatu.
