The Jelajah Rasa Bali experience draws inspiration from the restaurant itself. Named after Indonesia’s intricate double ikat weaving tradition, Double Ikat celebrates a craft where every dyed thread contributes to a complete pattern only once woven together. Chef Wisnu applies the same philosophy in the kitchen, treating every ingredient, cooking technique, and regional story as an essential part of a larger culinary narrative. Hosted in the restaurant’s intimate Kitchen Studio, the experience begins with an element of mystery. Each evening revolves around a hero ingredient, selected by Chef Wisnu to showcase Indonesia’s remarkable biodiversity. Before the first course arrives, diners are presented with the restaurant’s signature Black Box, revealing the featured ingredient in its raw form alongside native spices, roots, and local produce.
