New Italian and Balinese culinary experiences at Segaran Dining Terrace, Jumeirah Bali

Located on Uluwatu’s cliff overlooking the Indian Ocean, Segaran Dining Terrace at Jumeirah Bali has unveiled a new dining experience, highlighting its Italian and Balinese culinary offerings. The fresh culinary programmes at the restaurant highlight the culinary vision of executive chef Alessio Nallino. Since joining the restaurant in March, Nallino has brought his extensive culinary experience spanning various countries including his native Italy, Switzerland, Australia and Vietnam, plus a tenure at a Michelin-starred restaurant in Macau.

Savour an array of authentic Italian flavours and flavourful Balinese fare prepared by chef Nallino and his talented team while enjoying the island’s gentle breeze. True to its name, Segaran Dining Terrace provides a glittering view of the ocean from its perch. Let’s take a peek at the restaurant’s Italian and Balinese culinary presentations.

An Italian Flair at Segaran Dining Terrace

The first one, which becomes the centrepiece of the restaurant’s new culinary offer is a five-course Italian night on Tuesdays and Saturdays, from 5.30pm to 11pm.

Nallino showcases his Italian heritage by presenting Italian comfort food with classical recipes. The al fresco dining experience begins with Burrata Tart and Bresaola, followed by main courses comprising the Manzo made with seared M5 striploin with black pepper sauce and the Agnelo, which is grilled lamb chop with crispy polenta, braised bell peppers and mustard jus.

Of course, when you talk about Italian comfort food, you’re going to talk about the pasta. On this note, the chef dishes out a number of housemade pasta topped by local meat, seafood, and vegetables freshly produced by nearby markets. Then leave some room for dessert as the this set dinner will be concluded with a tiramisu.

Homage to Balinese cuisine

Nallino and his team also pay tribute to the local culinary tradition in the restaurant’s Traditional Flavour Soiree programme every Friday from 5.30pm to 11pm. This culinary presentation highlights Bali’s famous babi guling (roasted suckling pig) cooked using local spices. It also presents a Jimbaran Barbeque Seafood, comprising river prawns, clams, calamari as well as coral fish served with sambal matah using fresh local produce. The culinary team will be present during this dining programme to serve the food directly while explaining the story behind it and what makes it special. 

Segaran Dining Terrace at Jumeirah Bali honours local culinary tradition through its Megibung feast presentation

Another homage to the local culinary tradition is the restaurant’s Balinese megibung feast, a set menu featuring the Balinese Nasi Campur (rice served with various dishes) with a slew of best-loved traditional foods from the island.

The feast is available every day from 6pm to 11pm. The dishes include Betutu Duck (braised duck leg marinated in Balinese spice), Lawar Nangka (finely chopped young jackfruits cooked with the Balinese base rajang spice, fried shallot and chilli) and Udang Bakar (Jimbaran-style grilled giant prawn with chilli barbeque sauce), among others. 

The megibung feast also presents popular Balinese desserts, such as the Dadar Gulung (Balinese pandan pancake with palm sugar filling) and the Laklak (rice flour pancake served with grated coconut and palm sugar).
