Standouts include Norwegian Salmon Confit in Vanilla Bourbon Tea, in which the richness of the salmon is complemented by the naturally smooth red tea’s round flavour and warm notes of fresh vanilla. The dish is paired with toasted brown butter hollandaise sauce and accompanied by the vegetal notes of young asparagus and beetroot. The dining experience is completed with TWG Tea’s wide-ranging dessert selection.
