Classics revisited
Everything old is new again seems to be the mantra behind The Black Swan’s latest menu revamp.
The swish eatery in the heart of the CBD has revived equally classic culinary treats to match their 1930s Art Deco-inspired decor. The Chicken Velouté ($18) is a velvety, comforting soup of poached chicken showcasing the veloute, one of the five “mother sauces” of classical French cuisine, while the escargots ($21 for a half dozen) are ingeniously topped with spoons of buttery bone marrow in each shell. Don’t miss also the Tournedos Rossini ($50) comprising truffle and foie gras stacked atop a tenderloin steak, or the Lobster Thermidor ($65) grilled with three cheeses – gruyere, mozzarella and parmesan. Cap off the meal with a show-stopper of a dessert: the Black Swan Fireball ($22) is a luxurious chocolate encased ice-cream first doused with Grand Marnier liqueur then flamed tableside for full, dramatic effect. 19 Cecil Street.
