Princess Terrace Keeps Penang’s Culinary Traditions Alive in Singapore

A longstanding favourite at Copthorne King’s Hotel Singapore, Princess Terrace serves a generous spread of Penang classics, from assam laksa and char kway teow to Nyonya kueh and more.

Princess Terrace at Copthorne King’s Hotel Singapore has been serving Penang cuisine since 1970, building a loyal following for its superb spread of heritage dishes and live stations. Helmed by Executive Chef Talor Liew, the restaurant continues to focus on preserving the flavours and traditions associated with Penang cooking. His meticulous attention to detail and insistence on using only the finest ingredients ensure that every dish is a perfectly executed.

The buffet begins with familiar appetisers such as kerabu achar, nasi ulam and nasi lemak wrapped in banana leaf. At the DIY Penang rojak station, diners can mix cucumber, cuttlefish, fried dough fritter, green mango, guava, honey pineapple, peanuts and white turnip with the requisite sweet-savoury dressing.

The live stations turn out Penang staples including freshly made kueh pie tee and popiah. Noodles are another strong suit. Choose from ark thui mee sua, featuring braised duck drumstick with fine rice vermicelli in Chinese herbal soup; fishball kway teow soup; Penang Hokkien mee; or the signature assam laksa comprising thick rice noodles in a spicy, tangy fish and tamarind broth.

For hearty mains, tuck into crispy belacan chicken wings, chicken satay, signature chicken curry and Penang char kway teow. Other robust dishes include assam fish with tomatoes and lady’s fingers and tau yu bak or braised pork in dark soy sauce. The emphasis here is on comforting, familiar flavours rather than reinvention, which is precisely the appeal of a buffet built around nostalgia and regional classics.

Dessert continues in the same spirit. Look out for homemade Nyonya kueh, silky beancurd with toppings such as gula melaka, grass jelly and boba, as well as cheng tng, bubur hitam and DIY chendol. Don’t forget to try the special homemade durian ban chang kueh, prepared fresh upon request.
