Buko pie

250g pie crust dough
1 cup unsalted butter, softened
1½ cups fine sugar
2 eggs, beaten
1 cup milk
2 cups young coconut, grated
1 tsp vanilla essence
pinch baking soda
1½ tsp nutmeg, grated, optional
250g pie crust dough, cut into strips (optional)
• Preheat oven to 180°C. To make a 9-inch pie shell, bake pie crust dough in a pie pan for 5 to 7 minutes.
• In a large kitchen bowl, make the filling by blending all ingredients together, starting with the butter and sugar, then adding other ingredients. Pour into the baked pie shell.
• Cover with pie crust strips, arranged in a criss-cross pattern, if desired.
• Bake in 180°C oven until filling is done and crust is golden brown, about 30 to 40 minutes. Serve warm or cooled to room temperature.
