Big porterhouse steak with mojito marinade

Serves 2 Prep time 15 minutes
Cook time 25 minutes

2 porterhouse steaks

mojito marinade
1 lime, cut into wedges
12 fresh mint leaves
2 tbsp brown sugar cubes, crushed
2 tbsp Bacardi light White Rum
3 tbsp Grey Goose Citron Vodka
½ cup ginger beer

garnish
10 mint leaves
1 green lime, cut into wedges
1 tbsp red peppercorns, toasted
pinch sumac
55g mixed greens

• Muddle lime, mint and brown sugar cubes in a container. Bruise the leaves; do not crush them.
• Pour in rum, vodka, and ginger beer and lightly mix with the sugar mixture.
• When sugar has dissolved, pour mixture over porterhouse steaks and marinate for at least 2 hours.
• Heat grill till red hot, then grill the steak for 3 minutes on each side. Repeat process another 2 times.
• Serve with garnish.
