Big Kahuna burger from Pulp Fiction

Serves 4

400g minced beef
100g beef fat, minced
80g white onion, chopped
100g pickled gherkins, chopped
pinch salt and freshly cracked black pepper, to taste
1 canned pineapples, drained and roasted lightly

  • In a medium bowl, combine all the meat patty ingredients well and let sit to marinate in the fridge for 2 hours before moulding into 4 even patties that are 2cm thick and 12 cm diameter each.

Kahuna burger steak sauce

2 tbsp olive oil
2 big red onions, sliced
3 tbsp garlic, minced
4 tbsp Lea and Perry sauce
4 tbsp HP sauce
3 tbsp dark chocolate buttons
½ cup Kahlua
½ cup red wine
4 tbsp brown sugar

  • For the burger sauce, heat up 1tbsp olive oil in a pan and fry the red onions until softened and a bit charred.
  • Add in the minced garlic and fry to golden brown. Then add in the rest of the ingredients one after the other and let simmer for 35 minutes over low heat.

4 sesame seed burger buns, halved, buttered and lightly toasted
3 big ripened tomatoes, sliced
3 pickled gherkin, sliced to 3mm thick
8 slices Cheddar cheese
1 white onion, sliced to 5mm thick rings
1 Japanese cucumber, sliced to 3mm thick

  • Heat up a non-stick grill pan with 1tbsp olive oil then grill the beef patties on both sides over medium heat for 5 to 6 minutes each.
  • Sandwich one beef patty, two slices of tomato, 2 pieces of gherkin, two slices of cheese, 2 slices of onion rings and 2 slices of cucumber between sesame seed buns.
