Millet congee with sea cucumber and gastrodia

Serves 4

Cook time 2 hours

250g millet, available from Yue Hwa Chinese Products Emporium
500 ml water
150g sea cucumber
20g gastrodia (tian ma)
150g minced chicken
salt, to taste
sugar, to taste

spring onions
fried dough fritters, sliced

  • Soak millet in water overnight.
  • Soak sea cucumber in salt water for 15 minutes, then rinse under running water.
  • Cut the gastrodia and sea cucumber into small cubes.
  • Place soaked millet into a large pot and cook over medium heat for one and a half hours.
  • Add gastrodia, sea cucumber and minced chicken to the pot, all the while stirring to ensure that the minced chicken meat is separated and all the meat is cooked evenly. Cook for another 10 minutes.
  • Season to taste with salt and sugar and garnish with spring onions and fried dough fritters.
