Beef tomato burger

Serves 4 Prep time 10 minutes

2 beef tomatoes
8 slices crusty bread

Beef mix
2 slices wholemeal bread
35g white onions
55g sweet gherkins
200g Wagyu beef minced
2 tbsp mayonnaise
pinch rock salt and pepper

Truffle bread spread
2 tbsp truffle oil
2 tsp truffles, finely sliced and chopped
pinch rock salt and pepper
20g chives

Garnish
1 tbsp mayonnaise
50g mesclun mix

• Combine all the ingredients of the truffle bread spread. Spread it generously over the crusty breads. Toast the breads in a preheated oven at 175°C for 3 minutes.
• Trim off the sides of the wholemeal bread. Slice the wholemeal bread into 1cm by 1cm cubes. Meanwhile, dice the onions and gherkins. Combine the bread, minced wagyu beef, onions, gherkins and mayonnaise. Season to taste. Shape into patties.
• Heat up a cast iron pan with oil. To achieve medium well doneness, pansear the beef mix for 3 minutes on each side, 2 minutes for medium, and 1 minute for medium rare.
• Arrange the toasted breads on a plate. Layer sliced beef tomatoes with mayonnaise, mesclun and Wagyu beef patties. Serve.
