Dang gui prawn salad with rice wine dressing

Also known as Chinese angelica, dang gui is widely used in Chinese traditional medicine for gynecological ailments, fatigue, mild anemia and high blood pressure. In this salad version of drunken prawns, the bitterness of dang gui is the yang to the yin of sweet, succulent shrimps.
