Pork trotters and peanuts braised with first brew soya sauce

The big and supple blend with 75 percent Grenache is dominated by notes of ripe fruits, anise and mild spices. The vino lends plummy and chocolatey flavour to braised pig trotters stewed in aromatic dark sauce.

Khao soi with chicken and vegetables

Fire-torched beef fillet balls with brillat-savarin cheese

If Brillat-Savarin were a woman, she would be a Monica Bellucci: luscious, seductive and full-bodied. It’s after all a triple cream Brie. Bad news: it contains 40 percent fat. Good news: you won’t get anything less than maximum pleasure.

Glutinous rice with dried and fresh scallops

The Mandarin characters for scallops is dai zi, a homophone for ‘bring babies’. Besides being a symbol of fertility, these plum treasures are nestled within mounds of sticky glutinous rice for a hearty, filling treat.

Crabmeat & dried shrimp yu sheng with thai dressing

It doesn’t have any raw fish slices within but this refreshing appetiser brims with other markers for good fortune: fruit to represent tian tian mi mi (sweetness), lotus seeds to symbolise duo zi duo sun (abundant offspring), and prawn crackers for jin yu man tang (the scattering of good luck).

Wok-charred sea eel with rice wine
