Bbq pineapple beef ribs with brown pineapple rice
The marriage of pineapple and BBQ sauce imparts a fresh tropical zing to the savoury ribs. Accompany with wholesome brown rice to mop up the delicious sauce.
Serves 2 Prep time 10 minutes
Cook time 1 hour
brown pineapple rice
1 cup brown rice, cooked
2 tbsp dry radish (rinse with water before using)
3 tbsp sesame oil
1 tbsp Worcestershire sauce
2 tbsp coriander root, chopped
30g green apples, diced
30g white cabbage, diced
80g sweet pineapples, diced
4 tbsp white onions, chopped
• Combine all ingredients except onions.
• Heat up sesame oil in a wok and fry onions till fragrant. Add rice mixture and fry for an additional 5-8 minutes. Serve warm.
bbq pineapple beef ribs
1 cup Heinz tomato ketchup
½ cup fresh pineapple juice
2 sprigs coriander root
2 tbsp HP brown sauce
¼ cup packed brown sugar
¼ cup red onions, finely chopped
2 tbsp vinegar
3 tsp Worcestershire sauce
2 drops Tabasco sauce
½ cup water
2kg beef short ribs
1½ tsp salt
• Combine all ingredients (but only ¼ tsp of salt) in a Pyrex glass bakeware.
• Let the sauce simmer over a barbecue grill for 55 minutes, then remove short ribs. Reserve sauce.
• Sprinkle remaining salt evenly over the ribs.
• Brush sauce over ribs 2 or 3 times while grilling for another 1-3 minutes. Once cooked, brush ribs with remaining sauce.
• Serve hot with pineapple rice.
