Genting green and fruit salad

spiced fruits
80g star fruit
80g guava wedges
80g local mango, diced
80g rose apple
40g red onion, blanched and soaked in apple cider vinegar then diced
1 tbsp white wine vinegar
2 tsp brown sugar
spiced nuts
60g local peanuts
1 tbsp egg white, beaten
1 tsp cumin, toasted
1 tsp chilli powder, toasted
1 tsp brown sugar
dressing
3 tbsp olive oil
2 tbsp shallots, chopped
1 tbsp white wine vinegar
pinch salt
pinch pepper
60g custard apple
100g Genting mesclun mix
garnish
10g Genting herbs
• Combine all spiced fruit ingredients in a bowl and mix well.
• Combine all spiced nut ingredients in separate bowl, then bake in an oven for 10 minutes at 150°C.
• Combine all dressing ingredients in a bowl and mix well.
• Place mesclun mix, spiced nuts and spiced fruits into a bowl, then top with dressing and garnish.
