Peanut pancake
PEANUT PANCAKE
Prep time: 10 minutes
Cook time: 10 minutes
Makes: 8 slices
500g self-raising flour
2 egg
¼ cup fine sugar
Pinch salt
2 tbsp unsalted butter
100ml water
250g coconut milk
filling:
100g freshly roasted peanut (crushed when hot)
4tbsp fine castor sugar
- To make the filling, mix the sugar and peanut together well.
- In a bowl, mix the eggs, butter, sugar, salt, water and milk well.
- Add flour bit by bit and keep mixing by stirring to form a smooth batter. Set aside for half an hour.
- Heat up a non-stick pan over medium heat. Lightly oil the pan if necessary then pour batter onto the pan. Cover and cook on medium heat until pancake is nicely browned on the outside. Be careful not to burn the pancake.
- Spread sugar peanut mix over the pancake generously, fold into half, cut and serve immediately.
