Wood-grilled skate chop

2 skate wings (300g each), skinned
salt and pepper, to taste
100g flour
2 tbsp olive oil
2 shallots, minced
2 garlic cloves, minced
2 tbsp capers
2 tbsp unsalted butter
1 lemon (flesh only)
2 thyme sprigs
1 tbsp parsley, chopped
- Season the skate wings with salt and pepper, and dust evenly with flour.
- Grill the skate wings over apple wood for 2 minutes on each side. Remove and set aside.
- Heat a heavy skillet or pan with olive oil, add shallots and garlic, and fry them till fragrant. Add capers, butter and skate wings into the skillet. Over medium heat, slowly brown the butter while spooning it over the top of the wings.
- Cook for 5 to 8 minutes till the butter turns dark brown and the wings’ meat pulls away from the cartilage. Remove skillet from heat, add the lemon, thyme and parsley, and swirl skillet to foam the butter. Serve.
