Merdeka Pairing Dinner table setup

The dinner begins with Pesan Be Pasih, a Mahi-mahi fillet, expertly grilled in banana leaf with a vibrant tomato, kemangi, and turmeric paste. The amuse-bouche is paired with the crisp and fruity Sababay Ascaro sparkling wine for a delightful start. For a starter, Tuna Dabu-Dabu— shredded grilled tuna with a zesty Manado-inspired sambal, will be paired with Plaga Chardonnay, where the tropical fruit notes complement the dish’s freshness.
