My family’s origins are complicated, but I’d say I’m a Madrid native. I spent most of my life there – my mum, who’s ethnically Basque, and I moved to Australia when I was nine years old, but I returned to Spain when I was 15. On the other hand, my dad migrated from Andalucía to Madrid, where he met my mum. That said, most of my culinary influences are from the Basque Country in the north, where I worked at several world-renowned restaurants.
