The Laguna, Nusa Dua, Bali unveils an unmatched dining experience at Nusa Bagus Island

There is no limit for The Laguna, A Luxury Collection Resort & Spa, Nusa Dua, Bali, when it comes to delivering the finest services and exceptional experience to its guests. The resort unveils a new collaboration, the ‘Chef on Tour’ with Chef Tay Chan Yong, the head chef of The Cave by Chef Ryan Clift.

Appointing the freshly designed Nusa Bagus Island as the venue, diners will have a six-course set menu surrounded by divine lagoon pools, partitioning one table from another to create a more discreet and intimate atmosphere.

Known for the inventive dining experience, The Cave has been one of the island’s most sought-after unique dining attractions. Not only because it is settled within the conserved underground cave but also for its modern take on gastronomy, which leaves diners in awe. Thus, guests and diners at The Laguna, Nusa Dua, Bali can expect the same exhilaration for chef Chan’s takeover at Nusa Bagus Island.

He and the team will elevate the guest’s culinary journey through his signature menu, highlighting worldwide flavours with a touch of Asian flair. His past experiences contribute to the process of concocting his today’s culinary masterpieces that are loved by many.

His stellar track record as chef de partie at The Ritz-Carlton and a sous chef at the Tippling Club, Singapore, has put him in the fine dining scene’s limelight. He believes that work ethics and discipline are the things that helped him achieve his position today.

“Discipline is the most important aspect to uphold standards and gain even greater achievements. With everything I have learned so far, I want to be of good use to the team and lead them to achieve all our goals,” says Chan.

Exquisite indulgences in a six-course menu await you as Chan serves flavourful dishes like Tuna Taco with salmon ikura (red caviar) in a crispy tortilla, a prime quality 48 Hours Short Rib with red wine sauce, and Hokkaido Scallop with garlic soup. Simultaneously, relish the Lemon Tart with orange cake to end the experience on a sweet note.

The ‘Chef on Tour’ at Nusa Bagus Island, The Laguna, Nusa Dua, Bali, is available on 17 – 18 March 2023 from 7pm – 10pm. Reserve a table for Rp1,400,000 for a food set menu only. Add wine and cocktail pairing for Rp2,800,000.
