50ml Ron Zacapa dark rum
30ml fresh mandarin orange purée
15ml fresh lemon juice
15ml fresh lime juice
10ml Cherry Heering liqueur
15ml gula melaka syrup
250ml house-spiced lemongrass tonic water

couple pinches cloves and cinnamon
a few green cardamom pods
2-3 stalks lemongrass
1 can tonic water

garnish
mandarin orange wedge, lemon peel and orchid flower

• To make house-spiced lemongrass tonic water, mix all ingredients together.
• Aside from tonic and garnishes, add the rest of the ingredients into a Tiki mug. Use a swizzle stick for 10 seconds to bring ingredients together, then add tonic and top up with ice.
• Garnish with orange, lemon peel and orchid flower.
